I love to bake. For the 3yo’s Tangled birthday party, I made three different types of cupcakes. And no, I’m definitely not an overachieving mom, I just couldn’t decided which one to make, so I made them all. So, last year, at the 9yo’s birthday party, he wanted chocolate cake. I really don’t like chocolate cake but it was his birthday after all.
I read through the post and started looking at the ingredient list. It called for a small amount of espresso powder in both the cake mix and the frosting. HELL YA! Now we are talking. This ingredient might just be what turns me into a chocolate cake lover. As a coffee lover, I knew that I should probably cut back on the amount of espresso because this was for kids after all; however, I wanted to keep a little bit for flavor. What could go wrong?
I made this cake into cupcakes and after each of the kids ate only one, they were flying off the walls, acting crazy and smashing cupcakes all over each other. It was pure madness! I honestly didn’t think that such a small amount of espresso would have such a huge effect on the kids, but I was wrong. Then, I started worrying that these kids would go home all cracked out and their parents would be super pissed.
Needless to say, I will not be serving that recipe at his birthday party this Sunday. Lesson learned!
